It's lunchtime. Now you see it, now you don't.



Lunch for me is always hit and miss. But when I do sit down to eat, there is nothing more satisfying than a sandwich deluxe.
A bagel is always a good beginning, toasted or plain. Cucks, tomato, cheese, avocado, baby spinach, fresh pepper, either mayo or dijon mustard. Welcomed additions, roasted chicken, Tuscany ham or perhaps some wild salmon.
I know it's not much of a recipe but it is one delicious mid day meal. Followed up with a lemon & ginger tea. Ahh








Now it's time to plant my tulips, these are the ones that have been in my crisper drawer for awhile. As soon as they break through the soil I will take a picture.

Snow is in the forecast for the next few days, so back to cleaning, making soap and knitting. I am also wanting to start my new read, The memory Keeper's Daughter, by Kim Edwards.

I've never thought of using baby spinach in a sandwich. It's always the same old boring iceberg lettuce. Your bagel sandwich reminds me that I haven't made one in way too long.
