Lunch for me is always hit and miss. But when I do sit down to eat, there is nothing more satisfying than a sandwich deluxe.
A bagel is always a good beginning, toasted or plain. Cucks, tomato, cheese, avocado, baby spinach, fresh pepper, either mayo or dijon mustard. Welcomed additions, roasted chicken, Tuscany ham or perhaps some wild salmon.
I know it's not much of a recipe but it is one delicious mid day meal. Followed up with a lemon & ginger tea. Ahh

Snow is in the forecast for the next few days, so back to cleaning, making soap and knitting. I am also wanting to start my new read, The memory Keeper's Daughter, by Kim Edwards.
See you next, when dinner is served.

I've never thought of using baby spinach in a sandwich. It's always the same old boring iceberg lettuce. Your bagel sandwich reminds me that I haven't made one in way too long.
Now that's my kind of lunch!!!
Yum! Quick and easy. And tulips, too! I can't wait for them to pop up!
My kind of lunch, easy and filling! The part about planting tulips now??? Is it not too early for that, I am not a great gardener, so that's why I am asking...
