Ahh breakfast



The most important meal of the day. This pancake recipe comes from a very old friend of mine. He would treat us to these delightful beauties everytime we visited at the cottage. For some reason mine still don't get as high as his , but boy they taste great. I have added a few things, as most cooks do, just to make it my version.

Pancakes a la Paul

1 1/2 cups flour
1Tbsp baking powder
1/2 tsp baking soda
1 egg
1 tbsp of sugar, ( I use brown just because i like it much better)
2 tbsp melted butter
1 1/2 cups milk
optional
1 tbsp of vanilla
a shake or two of Cinnamon

I add about a tbsp of vinegar in with the baking soda & powder, Helps dissolve to eliminate any chance of clumps ( if you have ever bitten into that, you know what i mean. Besides i think it helps the pancakes to get fluffier)

mix the egg, butter, sugar together, add the vanilla, cinnamon, baking soda/ powder combo.
blend in the milk and add flour. Mix until blended. I let mine batter sit for about 5 minutes.
Heat up the pan and start cooking.
** I have teenagers who are very active I add whey powder into the batter, to give them an extra added boost of protein.

To serve I love these with yogurt ( flavor of choice or mood & fresh berries)

Serve this with a fruit smoothie and you are good to go.

Smoothie
I make mine to serve 4 big boys so you can adjust

2 bananas
fresh or frozen fruit ( 1 cup)
1 cup of yogurt or more ( what ever flavor you like)
milk ( geared to how many and how thick you like it.
and of course protein powder. usually 3 tbsp per 8 oz serving.

sometimes with the fruit (fresh)I will blend what i have on hand ,add a little juice and put it into ice cube trays freeze, then i just add these to the smoothie.

Mothergoose, breakfast looks good!!! Maybe I'll stop over. The lake pictures are fantastic, it sure does look like a hugh skating rink, looks like a ton of fun to be out there. galaview girl

ooooooo, I've never tried brown sugar in my pancake mixture before. Sure will give it a try next time. Smoothie looks delicious.
